    Preheat and prep

    Preheat oven to 220Β°C (200Β°C fan). On a large baking sheet, toss the halved potatoes with 2 tbsp garlic-infused oil, paprika, salt, and pepper. Spread in a single layer.

    Add the chicken

    Nestle the chicken thighs skin-side up among the potatoes. Season generously with salt, pepper, and a little extra paprika.

    Roast

    Roast for 35–40 minutes until the chicken skin is deep golden and crispy and the potatoes are tender and caramelising at the edges.

    Key tip: Don't crowd the pan β€” potatoes need space to roast rather than steam. Use your largest baking sheet.

    Make the yogurt sauce

    While the chicken roasts, stir together the lactose-free yogurt, garlic-infused oil, a good squeeze of lemon juice, the chopped dill or chives, and a pinch of salt.

    Plate and serve

    Spoon the yogurt sauce generously across warmed plates. Top with the roasted chicken and potatoes, then scatter a handful of rocket over everything. A final squeeze of lemon, and serve immediately.
