Why does banana ripeness change its FODMAP status?

As bananas ripen, their starch converts to sugar — and their fructooligosaccharide (FOS) content increases significantly. A firm, slightly green banana has low FOS and is low FODMAP. An overripe banana with brown spots has substantially more FOS and becomes high FODMAP.

Monash University certifies one firm banana (100g) as low FODMAP. Eating two bananas in one sitting or choosing a very ripe banana pushes it into high FODMAP territory.

Practical tip: buy bananas slightly green, eat them within 1–2 days of purchasing, and avoid the very ripe ones in fruit bowls.
